私たちが愛してやまない鰻。縄文時代の出土品に鰻の骨が出土しているようだ。また、奈良時代の『万葉集』に大伴家持が、柿本人麻呂に贈った短歌に「武奈伎(むなぎ)」とあるのが書物での初出でこれがうなぎを指していると言われている。

かねりん鰻店は創業から100年、鰻店としては65年。鰻と大きく染め抜かれた暖簾をくぐって店内に入れば、鰻を焼く芳ばしい香りが清潔感のある店内に充満している。

上質な鰻を素早く割き、備長炭で外は香ばしく、中がふっくらとなるようじっくりと焼く。先代より長く受け継がれてきたタレを3回くぐらせながら艶々と仕上げる。大きな釜で炊き上げた熱々のごはんの上に旨味を封じ込めた鰻を乗せてできあがり。

ハレの日を象徴するように、日本人の日常生活の中で鰻は贅沢なものかも知れない。ただ鰻は食文化の一つとして多くの人の記憶に深く刻まれ、私たちを魅了し続ける。

「ああ、美味しい、というお客様の笑顔が、私たちにとって何よりの喜びです」とかねりんの袴田裕太郎(はかまた・ゆうたろう)さんは微笑む。日々の慌ただしさをしばし忘れ、たまにはゆっくりと鰻を食す時間を持ちたいものだ。

We love Unagi (eel). Eel bones have apparently been unearthed among other items from the ancient Jomon period. The “Munagi” appeared in a poem of OTOMO no Yakamochi that was sent to KAKINOMOTO no Hitomaro. This was published in an ancient anthology of Japanese poems called “Manyoshu” in the Nara period. This is considered the first time eel was mentioned in a written form.

Kanerin has been in business for 100 years and has been an eel restaurant for 65 years.

When entering the restaurant, passing through the shop curtain with a large dyed Chinese character of Unagi, a toasty small of grilled eel permeates the tidy restaurant.

Quickly open the fresh eel and then slowly grill over Bincho charcoal so that the outside becomes crispy and the inside fluffy. To give it a glossy finish, the eel is then dipped three times in a sauce that has been handed down from generation to generation. To finish, place the eel, containing all the goodies, on rice freshly steamed in a large pot.

As a symbol of a special occasion, eel may be a luxury in Japanese daily life. However, eel is part of the food culture that is deeply engraved in the memory of many people, and we love it very much.

“The customers’ happy faces while saying “oh, delicious” are our greatest pleasure,” smiles HAKAMATA Yutaro of Kanerin. It might be a lovely idea to take a break from the hustle and bustle of everyday life and enjoy a leisurely meal of eel.
